Recipes: Breakfast Poutine

I just discovered this recipe and I just had to share it with you! It’s five Weight Watchers points a serving and is absolutely delicious. And while it is call a breakfast poutine, you can enjoy this yummy meal any time.

Here’s what you’ll need:

  • 3 cups of diced frozen potatoes
  • 1 1/2 tsp olive oil (extra virgin is best)
  • 1 tsp kosher salt
  • 1 tsp minced garlic
  • 1/2 tsp ground cumin
  • 1 cup of chopped onions
  • 3 oz diced, uncooked Canadian bacon
  • 4 oz fat free shredded cheddar cheese
  • 4 large eggs

Instructions

  1. Preheat oven to 450°F and line a cookie sheet with parchment paper or foil sprayed with cooking spray.

  2. Toss potatoes with olive oil, salt, granulated garlic, and cumin. Bake for 15 minutes or until browned and crispy.

  3. While potatoes cook, heat remaining ½ tsp olive oil in a medium nonstick skillet.

  4. Sauté onion and back bacon for 8 minutes or until soft. When done, toss potatoes in with onion mixture and keep warm on stove.

  5. Spray a nonstick skillet with cooking spray and cook 4 eggs sunny side up. Divide potato mixture across 4 plates, top each with 1 oz cheese and an egg and serve.
