Recipes – Easy Brunch Bake

By popular demand, my first Food Friday post is all about the Easy Brunch Bake from Tasty. I made this dish on Christmas morning as a “icing on the cake” after a fabulous Friendsmas. According to my husband and friends, this dish is even better the next day! I think this is a great dish to help cure hangovers too hahaha.

Anyway, here’s what you’ll need:

  • 6 refrigerated buttermilk biscuits (we used the Pillsbury Southern Homestyle Buttermilk Biscuits)
  • 12 eggs
  • 1/2 onion, diced
  • 5 oz Canadian bacon, diced (we used cooked sausage and bacon)
  • 1/2 cup cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp. chives, chopped

Whisk together the eggs, onion, bacon, cheese, salt, and pepper. Place buttermilk biscuits in a greased 9×9 inch casserole dish, and pour the egg mixture over them. Top with chives. Bake at 350°F/177°C for 30-35 minutes. Let cool and top with more chives (optional). Here’s Tasty’s video to help give visual instructions.
